Prepare the Yellow Peppers
Slice the yellow bell peppers in half lengthwise and remove the seeds and membranes. Set aside.

Prepare the Shrimp
In a bowl, season the shrimp with salt and black pepper. Set aside.

Make the House Secret Sauce
In a small bowl, mix the mayonnaise, Sriracha sauce, lemon juice, garlic powder, salt, and black pepper until well combined. Adjust seasoning to taste.
Assembling the Toritos

Stuff the Peppers
Take a half of the yellow bell pepper and fill it with a portion of seasoned shrimp and a handful of shredded mozzarella cheese.

Wrap with Bacon
Wrap each stuffed pepper with a strip of bacon, securing it with a toothpick if necessary.
Cooking

Preheat the Oven
Preheat your oven to 375°F (190°C).

Bake the Toritos
Place the wrapped peppers on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, or until the bacon is crispy and the shrimp are cooked through.
