Prepare the Shrimp and Chorizo

In a skillet over medium heat, add the olive oil. Once hot, add the chorizo and cook for about 5 minutes until slightly crispy. Add the shrimp and season with salt, black pepper, and red pepper flakes. Cook until the shrimp is pink and fully cooked, about 3-5 minutes. Remove from heat and set aside.

Grill the Steak and Chicken

Season the grilled steak and chicken with salt and pepper. Grill on medium-high heat until fully cooked, about 6-8 minutes for steak and 5-7 minutes for chicken. Dice both into bite-sized pieces and set aside.

Sauté the Onion

In the same skillet, add sliced onions and sauté for about 5 minutes until they are soft and slightly caramelized. Remove from heat and set aside.

Combining and Melting

Melt the Cheese

In an oven-safe dish, combine the mozzarella cheese, cooked shrimp, chorizo, diced steak, and chicken. Mix well to combine all ingredients.

Bake the Queso Fundido

Preheat your oven to 375°F (190°C). Place the dish in the oven and bake for 15-20 minutes, or until the cheese is fully melted and bubbling.

Finish with Toppings

Once out of the oven, top the melted cheese with the sautéed onions and freshly chopped scallions.
