Preparation of Seafood

1

Prepare the Scallops

Rinse the scallops under cold water and pat them dry with a paper towel. Remove any tough muscle on the side if present.

2

Sear the Scallops

In a skillet over medium-high heat, add a splash of olive oil. Once hot, add the scallops and sear for about 2-3 minutes on each side until they are golden brown and opaque. Remove from heat and let cool.

Preparation of Vegetables

3

Chop the Vegetables

Finely chop the red onion, cucumber, and serrano chili. If you prefer less heat, remove the seeds from the chili before chopping.

Making the Sauce

4

Mix the Sauce Ingredients

In a mixing bowl, combine mayonnaise, lime juice, minced garlic, chopped cilantro, and salt. Stir well until all ingredients are fully incorporated.

Assembly

5

Combine Ingredients

In a large bowl, combine the seared scallops, chopped vegetables, and crushed red pepper. Add the homemade sauce and mix gently until everything is well coated.

6

Serve

Transfer the botana de cayo de hacha to a serving platter and enjoy it chilled as an appetizer or snack.
