Chips and Cheese

Method

Prepare the Ingredients

  1. 1

    Cook the Protein

If using carne asada, grill or pan-sear the meat until cooked to your liking, about 5-7 minutes per side. If using chicken, cook until no longer pink in the center. Let rest, then chop into bite-sized pieces.

  2. 2

    Sauté the Vegetables

In a skillet, sauté the diced white onion, red bell pepper, and green bell pepper over medium heat until softened, about 5 minutes. Add the chopped green onions and cook for an additional minute.

  3. 3

    Prepare the Toppings

In a bowl, mix the guacamole and pico de gallo together, if desired. Set aside. Prepare the sour cream and shredded cheese for serving.

Assemble the Nachos

  1. 4

    Layer the Chips

On a large baking sheet or platter, spread out the tortilla chips in an even layer.

  2. 5

    Add the Cheese

Pour the queso amarillo over the tortilla chips, ensuring an even distribution.

  3. 6

    Top with Protein and Vegetables

Evenly distribute the cooked carne asada or chicken and the sautéed vegetables over the chips.

  4. 7

    Add Toppings

Spoon guacamole, pico de gallo, and sour cream generously over the nachos. Sprinkle shredded cheese on top.

  5. 8

    Serve

Serve the nachos immediately with extra toppings on the side for guests to add as they like.
