Prepare the Au Jus

In a saucepan, heat the olive oil over medium heat. Add sliced onions and minced garlic, sauté until softened and slightly caramelized, about 5-7 minutes. Pour in the beef broth, add black pepper, and salt to taste. Bring to a simmer and let it cook for 10 minutes.

Prepare the Roast Beef

While the au jus is simmering, slice the roast beef thinly against the grain. If using leftover roast beef, warm it slightly in a microwave or skillet.

Assemble the Sandwiches

Preheat the oven to 350°F (175°C). Cut the submarine rolls in half lengthwise. Place the sliced roast beef on the bottom half of each roll and top with provolone cheese. Place the sandwiches on a baking sheet and bake for 5-7 minutes, or until the cheese is melted.

Serve

Remove the sandwiches from the oven. Serve them hot with a small bowl of au jus for dipping. Enjoy with fries on the side!
