Cooking Instructions
- 1
Preparing the Prime Rib
Preheat your oven to 450°F (232°C).
- 2
Seasoning
In a small bowl, mix the kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the prime rib roast with olive oil and then generously apply the seasoning mix all over the roast.
- 3
Roasting
Place the seasoned prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes to develop a crust.
- 4
Reducing Temperature
After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for about 15-20 minutes per pound for medium-rare, or until the internal temperature reaches 130°F (54°C).
- 5
Resting
Remove the prime rib from the oven and cover it loosely with aluminum foil. Let it rest for at least 20-30 minutes before slicing.
- 6
Making the Au Jus
While the meat is resting, pour the beef broth into the roasting pan, scraping up any browned bits. Heat the mixture over medium heat until warmed through. Strain if desired.
- 7
Serving
Slice the prime rib and serve with the au jus on the side.
