Prepare the Bread
Preheat the oven to 350°F (175°C). Cut the brioche bread into 1-inch cubes and place them in a large mixing bowl.

Make the Custard
In a saucepan, combine milk, heavy cream, and white chocolate chips. Heat over medium heat, stirring until the chocolate is melted and the mixture is smooth. Remove from heat and let cool slightly.

Combine and Bake
Pour the custard mixture over the brioche cubes and gently stir to combine. Let sit for 15 minutes to allow the bread to soak up the custard. Transfer the mixture into a greased baking dish and bake for 45-50 minutes, or until the top is golden brown and a knife inserted comes out clean.

Prepare the Ganache
While the bread pudding is baking, prepare the white chocolate ganache. Melt 1 cup of white chocolate chips with 1/2 cup of heavy cream in a microwave or over a double boiler until smooth. Stir well and set aside.

Serve
Once the bread pudding is done, let it cool slightly before serving. Drizzle the white chocolate ganache over the top before serving.
