Prepare the Sauce

Make the Pina Colada Sauce

In a small saucepan, combine the coconut milk, pineapple juice, brown sugar, lime juice, and vanilla extract. Heat over medium heat until the sugar dissolves and the mixture is warm. Remove from heat and set aside.

Prepare the Shrimp

Prepare the Beer Batter

In a mixing bowl, whisk together the beer, flour, salt, and black pepper until smooth. The batter should be thick enough to coat the shrimp.

Coat the Shrimp

Dip each Royal Red shrimp into the beer batter, ensuring it is fully coated. Then, roll each battered shrimp in the coconut flakes to coat.

Fry the Shrimp

Heat the Oil

In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp

Carefully place the coated shrimp into the hot oil, cooking in batches if necessary. Fry for about 3-4 minutes or until golden brown and crispy. Remove the shrimp from the oil and place on paper towels to drain any excess oil.
