Prepare the Kiwi
Peel and slice the kiwi into small pieces, setting one slice aside for garnish.
Mix the Ingredients
In a cocktail shaker, muddle the kiwi pieces. Add the Cathead vodka and fresh lime juice. Fill the shaker with ice and shake well.
Assemble the Drink
Strain the mixture into a tall glass filled with ice. Top with ginger beer and stir gently to combine.
Garnish and Serve
