Prepare the Coconut Lime Rice
In a medium saucepan, combine the white rice and coconut milk with 1 cup of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked. Fluff with a fork and stir in lime zest and chopped cilantro. Season with salt to taste.

Marinate the Grouper
In a shallow dish, combine key lime juice, orange juice, and tequila. Place the grouper fillets in the marinade and let them soak for at least 30 minutes in the refrigerator.

Cook the Grouper
Heat olive oil in a large skillet over medium-high heat. Remove the grouper from the marinade and season with salt and pepper. Cook the fillets for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.

Serve
Plate the coconut lime rice and top each serving with a grouper fillet. Spoon pineapple salsa over the fish and enjoy!
