    Prepare the Lobster Tails

    Begin by thawing the lobster tails if they are frozen. Using kitchen scissors, carefully cut down the top of the shells, stopping just before the tail fan. Gently pull the lobster meat out of the shell, keeping it attached at the base, and lay it on top of the shell.

    Season the Lobster

    In a small bowl, mix together the olive oil, lemon juice, salt, and black pepper. Brush this mixture over the lobster meat.

    Steam the Lobster Tails

    Fill a large pot with about an inch of water and bring it to a boil. Place a steamer basket in the pot and arrange the lobster tails in the basket. Cover and steam for about 8-10 minutes, or until the lobster meat is opaque and cooked through.

    Grill the Lobster Tails

    Preheat your grill to medium-high heat. Once the lobster tails are steamed, place them on the grill, meat side down, for about 3-4 minutes to get a nice char. Flip and grill for an additional 2-3 minutes.

    In a small bowl, mix together softened butter with a pinch of salt and any additional desired seasonings (like garlic powder or fresh herbs) to create a creamy dipping sauce.
