Directions
- 1
Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let cool.
- 2
Make the filling
In a large bowl, whisk together the egg yolks and sweetened condensed milk until smooth. Slowly add the key lime juice and mix until well combined. Pour the filling into the cooled graham cracker crust.
- 3
Bake the pie
Bake the pie in the preheated oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours, or until chilled.
- 4
Serve the pie
Once chilled, top the pie with coconut whipped cream and sprinkle toasted coconut flakes on top. Garnish with a lime wheel before serving.
