    Prepare the Filet

    Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

    Season the Steak

    Generously season both sides of the filet with salt and black pepper.

    Heat the Pan

    In a skillet, heat the olive oil over medium-high heat until it shimmers.

    Sear the Filet

    Add the filet to the skillet. Sear for about 4-5 minutes on one side without moving it to develop a nice crust.

    Flip and Add Butter

    Flip the filet over, add butter and optional rosemary to the skillet. Cook for another 4-5 minutes for medium-rare doneness, basting the steak with melted butter.

    Check Doneness

    Use a meat thermometer to check for an internal temperature of 130°F (54°C) for medium-rare.

    Rest the Steak

    Remove the filet from the skillet and let it rest for 5 minutes before slicing and serving.
