Prepare the Baguette
Preheat your oven to 375°F (190°C). Slice the baguette into 1-inch pieces and arrange them on a baking sheet. Brush with melted butter and toast in the oven until golden brown, about 10 minutes.

Sauté Vegetables
In a skillet over medium heat, melt 1 tablespoon of butter. Add the chopped onion and celery, cooking until soft and translucent, about 5 minutes. Season with salt and pepper.

Make the Cheese Mixture
In a mixing bowl, combine the sautéed vegetables, blue crab meat, gruyere cheese, cheddar cheese, parmesan cheese, mozzarella cheese, goat cheese, and cream. Mix well and season with additional salt, pepper, and paprika to taste.

Bake the Au Gratin
Transfer the crab mixture into a greased baking dish. Sprinkle additional cheese on top if desired. Bake in the preheated oven for 20-25 minutes or until bubbly and golden brown on top.

Remove from the oven and let cool slightly. Serve hot alongside the toasted baguette slices.
