Prepare the Ribs
Preheat your oven to 300°F (150°C). Season the baby back ribs with salt and black pepper on both sides.

Make the Marinade
In a large bowl, combine citrus juice, hoisin sauce, sake, grated ginger, and red pepper jelly. Mix well until fully combined.

Marinate the Ribs
Place the ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour, or preferably overnight.

Bake the Ribs
Remove the ribs from the marinade and place them on a baking sheet lined with aluminum foil. Reserve the marinade for later use. Cover the ribs with another sheet of foil and bake in the preheated oven for 2.5 to 3 hours, until tender.

Serve
Once the ribs are beautifully glazed and caramelized, remove them from the oven. Let them rest for a few minutes before slicing. Serve with sesame seeds and sliced green onions on top.
