Preparing the Marinara Sauce

Add the Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Bring the sauce to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 20-25 minutes, stirring occasionally. Adjust seasoning if necessary.
Preparing the Calamari

Prepare the Breading
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Soak the Calamari
Place the calamari rings in a separate bowl and pour buttermilk over them. Let them soak for about 15 minutes.

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge them in the flour mixture, ensuring they are well-coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place on paper towels to drain.

Serve the fried calamari hot with the marinara sauce on the side for dipping.
