Prepare the Leg of Lamb

Preheat your oven to 180°C (350°F). Take the leg of lamb and place it in a roasting pan.

Season the Lamb

Mince the garlic cloves and mix them with fresh rosemary, olive oil, salt, and black pepper. Rub this mixture all over the leg of lamb.

Roast the Lamb

Roast the lamb in the preheated oven for approximately 1.5 hours, or until the internal temperature reaches 60°C (140°F) for medium rare.

Rest the Lamb

Once cooked, remove the lamb from the oven and let it rest for 15 minutes before carving.

Prepare Baby Potatoes

While the lamb is roasting, wash the baby potatoes and place them in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

Prepare Green Beans

Trim the ends of the green beans and steam them for about 5-7 minutes until they are bright green and tender-crisp.

Combine Vegetables

In a skillet, melt butter and add the cooked baby potatoes and green beans. Drizzle with lemon juice, and season with salt and black pepper. Toss to combine.

Make Chocolate Ganache

In a saucepan, heat the heavy cream until just boiling. Remove from heat and add the dark chocolate, letting it sit for a minute before stirring until smooth.

Prepare Strawberries

While the ganache is cooling, wash and hull the fresh strawberries.

Serve

Dip the strawberries in the chocolate ganache and dust with powdered sugar before serving.
