Calamari

Method

Prepare the Calamari

    In a large bowl, soak the calamari rings in buttermilk for about 30 minutes. This helps to tenderize the calamari.

    In another bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    After soaking, remove the calamari from the buttermilk, allowing any excess to drip off. Dredge each ring in the flour mixture until evenly coated.

Fry the Calamari

    Heat the Oil

    In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry the Calamari

    Working in batches, carefully add the breaded calamari rings to the hot oil. Fry for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Marinara Sauce

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

    Add the crushed tomatoes, oregano, salt, and black pepper. Stir to combine and let it simmer for about 15-20 minutes, stirring occasionally.

    Once the sauce has thickened, stir in the chopped fresh basil and remove from heat.

Serve

    Plate the crispy calamari and serve hot with the marinara sauce on the side for dipping.
