Preparing the Cake

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Whisk Sugar and Eggs

    In a separate mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is thick and pale, about 2-3 minutes.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine. Make sure the chocolate is not too hot to prevent cooking the eggs.

    Add Dry Ingredients

    Gently fold in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Be careful not to overmix.

    Prepare Ramekins

    Preheat the oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake the Cakes

    Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

    Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a serving plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream and fresh berries.
