Peeling the Plantains
Start by slicing off the ends of the green plantains. Make a shallow cut along the length of each plantain, being careful not to cut too deep, and then peel off the skin.

Slicing the Plantains
Cut the peeled plantains into thick slices, about 1 to 1.5 inches in thickness.

Heating the Oil
In a large frying pan, heat the vegetable oil over medium heat until it reaches about 350°F (175°C). You can test the oil by dropping a small piece of plantain into it; if it sizzles, the oil is ready.

Frying the Plantains
Carefully place the sliced plantains into the hot oil in batches, ensuring not to overcrowd the pan. Fry them for about 3-4 minutes on each side until they turn golden yellow.

Draining the Plantains
Using a slotted spoon, remove the fried plantains from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Flattening the Plantains
Once the plantains are cool enough to handle, use the bottom of a heavy plate or a tostonera (a plantain press) to flatten each piece to about half an inch thick.

Return the flattened plantains to the hot oil and fry again for about 2-3 minutes on each side until they are crispy and golden brown.

Once crispy, remove the tostones from the oil and drain them on paper towels again. Immediately sprinkle with salt and garlic powder to taste.
