Marinade

Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a blender, combine pineapple, ancho chili powder, chipotle peppers, minced garlic, oregano, cumin, salt, lime juice, and olive oil. Blend until smooth.

  2. 2

    Marinate the Pork

Place the pork shoulder pieces in a large mixing bowl. Pour the marinade over the pork and mix well, ensuring all pieces are coated. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Cooking the Pork

  1. 3

    Cook the Pork

Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade, letting excess marinade drip off. Grill or sauté the pork for about 10-15 minutes, turning occasionally until fully cooked and nicely charred.

  2. 4

    Rest the Pork

Once cooked, remove the pork from the heat and allow it to rest for 5 minutes before slicing into small pieces.

Taco Assembly

  1. 5

    Warm the Tortillas

In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

  2. 6

    Assemble the Tacos

Place a portion of the cooked pork onto each tortilla. Top with diced onion, chopped cilantro, slices of avocado, and radishes. Serve with lime wedges on the side.
