Method

Preparing the Steak

  1. 1

    Season the Steak

Pat the New York strip steaks dry with paper towels. Rub each steak with olive oil, then season generously with salt, black pepper, and garlic powder on both sides. Let them sit at room temperature for about 30 minutes to absorb the flavors.

  2. 2

    Preheat the Grill or Pan

Preheat a grill or a heavy skillet over medium-high heat. If using a skillet, you can add a little extra olive oil to the pan.

  3. 3

    Cook the Steak

Once the grill or pan is hot, place the steaks on it. Cook for about 4-5 minutes on one side without moving them for a good sear. Flip the steaks and cook for another 3-4 minutes for medium-rare, or until desired doneness.

  4. 4

    Add Fresh Rosemary

During the last minute of cooking, add fresh rosemary to the pan or grill for added flavor.

  5. 5

    Rest the Steak

Remove the steaks from the heat and let them rest for 5-10 minutes before slicing to allow the juices to redistribute.

Preparing the Sides

  1. 6

    Prepare the Asparagus

While the steaks are resting, prepare the asparagus by trimming the tough ends. You can snap them off by hand.

  2. 7

    Cook the Asparagus

In the same skillet used for the steaks (or a separate one), melt the butter over medium heat. Add the asparagus and sauté for about 5-7 minutes until tender but still crisp.

  3. 8

    Season the Asparagus

Drizzle lemon juice over the sautéed asparagus and season with salt and black pepper to taste. Toss to coat evenly.
