Prepare the Gordita Dough

    In a large mixing bowl, combine the masa harina, baking powder, and salt. Stir well to ensure the baking powder and salt are evenly distributed throughout the masa harina.

    Gradually add the warm water to the dry ingredients. Mix with your hands or a spoon until the dough begins to come together. It should be soft but not sticky.

    Knead the Dough

    Knead the dough for about 2-3 minutes until it is smooth. If the dough is too dry, add a little more water, one tablespoon at a time.

    Cover the dough with a damp cloth and let it rest for about 15 minutes to allow the masa harina to hydrate.
