Method

Preparing the Dough

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the masa harina, salt, and baking powder. Stir well to ensure that the dry ingredients are evenly mixed.

  2. 2

    Add Water

Gradually add the water to the dry mixture. Mix with your hands or a wooden spoon until a soft dough forms. If the dough is too dry, add more water, a tablespoon at a time.

  3. 3

    Knead the Dough

Knead the dough for about 2-3 minutes until it is smooth and pliable. Cover the dough with a damp cloth and let it rest for 30 minutes.

Forming and Cooking the Gorditas

  1. 4

    Shape the Gorditas

After resting, divide the dough into 10 equal pieces. Roll each piece into a ball and then flatten it into a disk about 1/2 inch thick.

  2. 5

    Cook the Gorditas

Heat a non-stick skillet or griddle over medium-high heat. Cook each gordita for about 3-4 minutes on each side, or until they develop a golden-brown color and slight char.

  3. 6

    Add Filling

Once cooked, slice open each gordita and fill it with refried beans, cheese, and a dollop of sour cream. Add salsa if desired.

  4. 7

    Serve

Serve the gorditas warm and enjoy!
