    In a large mixing bowl, combine the corn masa harina, salt, baking powder, and vegetable oil. Gradually add the warm water while stirring until a soft dough forms. The dough should be moist but not sticky.

    Shape the Gorditas

    Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it into a disc about ½ inch thick. Make sure the edges are smooth and even.

    Cook the Gorditas

    Heat a non-stick skillet or griddle over medium heat. Cook each gordita for about 4-5 minutes on each side, or until they develop golden brown spots. Remove from heat and keep warm.
