Making the Caramel

Prepare the Caramel
In a medium saucepan over medium heat, combine the granulated sugar and water. Stir gently until the sugar dissolves completely.

Cook the Sugar
Allow the mixture to boil without stirring until it turns a deep amber color, about 6-8 minutes. Be careful not to burn it.

Pour the Caramel
Quickly pour the caramel into a round baking dish, tilting it to coat the bottom evenly. Set aside to cool and harden.

Pour Mixture into the Dish
Carefully pour the flan mixture over the set caramel in the baking dish.

Prepare the Water Bath
Preheat your oven to 350°F (175°C). Place the baking dish in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the flan dish.

Bake the Flan
Bake in the preheated oven for about 50-60 minutes, or until a knife inserted in the center comes out clean.

Cool and Unmold
Remove the flan from the water bath and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight. To serve, run a knife around the edges and invert onto a serving plate.
