Preheat the oven to 400°F (200°C).

Roast Peppers
Roast the poblano peppers in the oven for 20-25 minutes until the skin is blistered and charred.

Remove peppers from the oven and place them in a plastic bag for about 10 minutes to steam.

Once cooled, peel off the charred skin and make a slit along the side of each pepper to remove the seeds.

In a bowl, beat the eggs until fluffy. In another bowl, mix flour, baking powder, milk, and salt until smooth.
