Preparing the Shrimp

    Season the Shrimp

    In a bowl, combine the peeled and deveined shrimp with salt and black pepper. Toss to coat evenly.

    Sauté the Shrimp

    In a large skillet, heat the olive oil over medium heat. Add the seasoned shrimp and cook for about 3-4 minutes, until they turn pink and are cooked through. Remove from the skillet and set aside.

Making the Chipotle Sauce

    Sauté Vegetables

    In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.

    Add Tomatoes and Chipotle

    Add the diced tomatoes and chipotle peppers in adobo sauce to the skillet. Stir to combine and cook for another 5 minutes.

    Add Spices and Broth

    Stir in the cumin, coriander, and chicken broth. Bring to a simmer and let it cook for 10 minutes, allowing the flavors to meld.

    Blend the Sauce

    Use an immersion blender to blend the sauce until smooth. If you don’t have an immersion blender, carefully transfer to a blender and blend until smooth. Return to the skillet.

Combine and Serve

    Combine Shrimp and Sauce

    Add the sautéed shrimp back into the skillet with the chipotle sauce. Stir to coat the shrimp in the sauce and let simmer for an additional 3-4 minutes.

    Serve the camarones enchipotlados hot, garnished with fresh cilantro and lime wedges on the side.
