For the Bistec

For the Burrito Assembly

Method

Cooking the Bistec

  1. 1

    Marinate the Steak

In a medium bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and black pepper. Mix well and add the flank steak. Ensure the steak is well-coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

  2. 2

    Cook the Steak

Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade, allowing excess to drip off. Grill or sear the steak for about 4-5 minutes per side, or until desired doneness is reached. Remove from heat and let it rest for 5 minutes.

  3. 3

    Slice the Steak

After resting, slice the steak into thin strips against the grain to ensure tenderness.

Assembling the Burritos

  1. 4

    Prepare the Ingredients

Lay out the flour tortillas on a clean surface. Have all other ingredients ready: refried beans, shredded cheese, sour cream, salsa, sliced avocado, and chopped cilantro.

  2. 5

    Fill the Tortillas

Spread about ¼ cup of refried beans in the center of each tortilla. Top with sliced bistec, then sprinkle with shredded cheese, a dollop of sour cream, a spoonful of salsa, a few slices of avocado, and a sprinkle of chopped cilantro.

  3. 6

    Roll the Burritos

Fold in the sides of the tortilla and then roll it up tightly from the bottom to enclose the filling. Repeat with the remaining tortillas and filling.

  4. 7

    Serve

Serve the burritos warm with additional salsa and sour cream on the side, if desired.
