    Prepare the Birria

    In a large pot, combine the beef chuck roast, guajillo chiles, ancho chiles, onion, garlic, cumin, oregano, bay leaves, salt, black pepper, and water. Bring to a boil, then reduce to a simmer.

    Cook the Beef

    Cover the pot and let it simmer for about 3 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Remove the beef from the pot and shred it with two forks. Strain the broth to separate the solids from the liquid. Reserve the broth.

    Make the Tacos

    Heat a skillet over medium heat. Dip a tortilla in the reserved broth, then place it on the skillet. Add a portion of shredded beef and a handful of cheese on one half of the tortilla.

    Fold and Cook

    Fold the tortilla over to create a taco and cook until the cheese is melted and the tortilla is crispy, about 2-3 minutes per side.

    Serve the quesabirria tacos with fresh cilantro, lime wedges, and salsa on the side.
