Prepare Cheese Mixture

    Mix Cheese

    In a large mixing bowl, combine the Chihuahua cheese, Oaxaca cheese, Monterey Jack cheese, chopped green chilies, ground cumin, and salt. Mix well until all the ingredients are evenly distributed.

    Transfer to Baking Dish

    Transfer the cheese mixture to a suitable oven-safe dish, spreading it evenly.

Bake Cheese

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Bake

    Place the dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Prepare Tortillas

    Heat Tortillas

    While the cheese is baking, heat the olive oil in a skillet over medium heat. Add the corn tortillas, one at a time, and cook for about 30 seconds on each side until they are warm and slightly crispy.

Garnish and Serve

    Once the queso fundido is done baking, remove it from the oven. Garnish with fresh cilantro, diced tomatoes, and a dollop of sour cream.
