In a small saucepan, combine equal parts water and sugar (1 cup each) over medium heat. Stir until the sugar has completely dissolved. Remove from heat and let cool.

For each fruit flavor, blend the fresh fruit (mango, strawberries, or pineapple) in a blender until smooth. Strain through a fine sieve if desired to remove seeds or pulp.

In a large pitcher, combine the cooled simple syrup, sparkling water, and the desired fruit purees. Start with 1 cup of mango, strawberry, or pineapple and adjust to taste.

Add lime juice and tamarind paste to the mixture. Stir gently to combine all ingredients. Taste and adjust sweetness by adding more simple syrup if necessary.
