Cut each corn tortilla into 6 wedges to create chip shapes.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Chips
Add a handful of tortilla wedges to the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, transfer the fried chips to a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt.

Mix the Salsa
In a bowl, combine the diced tomatoes, onion, jalapeño, and chopped cilantro.

Add Lime Juice and Season
Pour in the lime juice and sprinkle with salt. Toss everything together until well combined.

Let the salsa sit for about 10 minutes to allow the flavors to meld before serving with the tortilla chips.
