Prepare Rice

    Cook the Rice

    In a medium pot, combine 1 cup of white rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Prepare Beans

    Sauté the Beans

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add 2 teaspoons of minced garlic and sauté for about 1 minute until fragrant. Add 1 cup of canned black beans (rinsed and drained), 1 teaspoon of cumin, and 0.5 teaspoons of salt. Cook for about 5-7 minutes, stirring occasionally until heated through.

Prepare Meat

    Shred the Chicken

    If not already shredded, take 1 cup of cooked chicken and use two forks to shred it into bite-sized pieces. Set aside.

Assemble Burrito

    Fill the Tortilla

    Lay the large flour tortilla flat on a clean surface. Start by adding a generous scoop of the prepared rice in the center, followed by the sautéed black beans, and then the shredded chicken.

    Add Toppings

    Top with your choice of sour cream, shredded cheese, chopped lettuce, diced tomatoes, and sliced jalapeños as desired.

    Wrap the Burrito

    To wrap the burrito, fold the sides of the tortilla inward, then roll it from the bottom up tightly to encase the filling. Place seam-side down on a plate.
