    Prepare the Onions

    Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set them aside.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the beer until the batter is smooth and well-combined.

    Heat the Oil

    In a deep pot or fryer, heat the oil to 375°F (190°C). You can check the temperature with a cooking thermometer.

    Fry the Onion Rings

    Dip each onion ring into the batter, allowing excess to drip off. Carefully place the battered onion rings into the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

    Serve the crispy onion rings hot with a side of Texas Petal Sauce.

Sweet Potato Fries

    Prepare the Sweet Potatoes

    Preheat your oven to 425°F (220°C). Wash and peel the sweet potatoes, then cut them into thin fries or wedges.

    In a large bowl, toss the sweet potato fries with olive oil, salt, black pepper, and cinnamon until evenly coated.

    Bake the Fries

    Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are crispy and golden.
