Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries.

Soak the Fries
Soak the cut fries in water for at least 30 minutes to remove excess starch. Drain and pat them dry.

Bake the Fries
Preheat the oven to 425°F (220°C). In a large bowl, toss the dried fries with olive oil and a pinch of salt. Spread them in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Add Truffle Oil and Seasoning
Once the fries are done, remove them from the oven and drizzle with truffle oil. Toss with grated Parmesan cheese, chopped fresh herbs, and black pepper to taste.
