Prepare the crust
Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, 0.5 cups sugar, and melted butter. Mix until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Add 1 cup of sugar, sour cream, vanilla extract, lemon zest, and lemon juice. Mix until creamy. Add eggs one at a time, mixing well after each addition.

Combine and bake
Pour the cream cheese filling over the crust in the springform pan. Bake in the preheated oven for about 55-60 minutes or until the center is set but still slightly jiggly.

Cool and chill
Turn off the oven and leave the cheesecake inside for about 1 hour. Then, remove it from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.
