    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

    Add Tomatoes and Broth

    Stir in the crushed tomatoes and vegetable broth. Bring the mixture to a simmer, then reduce the heat to low and let it cook for about 10 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches to blend until smooth.

    Add Cream and Cheese

    Return the blended soup to the pot (if using a regular blender). Stir in the heavy cream, crumbled goat cheese, and chopped basil. Allow the soup to cook for another 5 minutes until heated through.

    Season and Serve

    Season the bisque with salt and black pepper to taste. Serve hot, garnished with additional goat cheese and basil if desired.
