Prepare the Grits
In a medium saucepan, bring chicken broth to a boil. Gradually whisk in grits, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally, until thickened. Stir in butter and white cheddar cheese until melted and creamy. Season with salt and pepper to taste.

Cook the Sausage
In a large skillet over medium heat, add sliced Andouille sausage. Cook until browned and slightly crispy, about 5-7 minutes. Remove sausage and set aside.

Sauté the Shrimp
In the same skillet, add a bit of oil if needed, then add minced garlic and sauté for about 30 seconds. Add shrimp and cook until they turn pink, about 3-4 minutes. Season with Cajun seasoning, salt, and pepper.

Combine Ingredients
Add the cooked sausage back to the skillet along with diced tomatoes and white wine. Bring to a simmer and let cook for about 5 minutes until slightly thickened. Stir in heavy cream and allow to simmer for another 2-3 minutes.

Spoon the cheesy grits onto plates and top with the shrimp and sausage mixture. Garnish with chopped green onions.
