Prepare the Bacon Jam
In a skillet, cook the bacon over medium heat until crispy. Remove the bacon and chop it into small pieces. In the same skillet, add chopped cherry tomatoes and minced garlic. Cook until the tomatoes burst and create a jam-like consistency. Stir in the chopped bacon and season with salt and pepper. Set aside.

Make the Basil Oil
In a small saucepan, heat olive oil over low heat. Add fresh basil leaves and cook gently for about 5 minutes until the basil is wilted and infused into the oil. Remove from heat and strain the oil into a bowl, discarding the leaves.

Sear the Scallops
Pat the scallops dry with paper towels and season with salt and pepper. Heat a non-stick skillet over high heat and add a little olive oil. Once the oil is hot, add the scallops and sear for about 2-3 minutes on each side until they are golden brown and cooked through.

Plate the Dish
On a serving plate, place the seared scallops and top with the bacon and tomato jam. Drizzle with basil oil for added flavor. Serve immediately.
