Method

Preparation of Crab Cakes

    Mix Ingredients

    In a bowl, combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, breadcrumbs, salt, and pepper. Mix gently to avoid breaking the crab meat.

    Form Patties

    Form the mixture into patties, about 3 inches wide. Place on a tray and refrigerate for at least 30 minutes.

    Cook Crab Cakes

    Heat olive oil in a skillet over medium heat. Cook the crab cakes for about 4-5 minutes on each side or until golden brown. Remove and keep warm.

Preparation of Citrus Aioli

    Combine Ingredients

    In a small bowl, whisk together mayonnaise, lemon juice, lime juice, minced garlic, salt, and pepper until smooth. Set aside.

Preparation of Warm Arugula Salad

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add sliced red onion and grape tomatoes. Sauté until tomatoes blister and onions are soft.

    Toss with Arugula

    Add arugula to the skillet and toss until just wilted. Season with salt and pepper.

Preparation of Roasted Tri Color Fingerling Potatoes

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare Potatoes

    Toss fingerling potatoes with olive oil, salt, pepper, and fresh herbs. Spread on a baking sheet.

    Roast Potatoes

    Roast in the oven for about 25-30 minutes or until golden and tender.

Assembly

    Serve

    On a plate, layer warm arugula salad, top with crab cakes, and drizzle with citrus aioli. Serve alongside roasted fingerling potatoes.
