    Prepare the Roasted Garlic

    Preheat your oven to 400°F (200°C). Cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.

    Make the Smoked Cheddar Sauce

    In a saucepan, melt butter over medium heat. Squeeze the roasted garlic out of its skin into the butter. Stir to combine. Add flour and cook for 1 minute, stirring constantly. Gradually add milk, whisking until smooth. Stir in smoked cheddar cheese, salt, and pepper until melted and creamy.

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until browned and tender, about 5-7 minutes. Season with salt and pepper.

    Assemble the Flatbread

    On each piece of flatbread, spread a generous amount of smoked cheddar sauce. Top with sautéed mushrooms, fresh spinach, and shaved Parmesan.

    Bake the Flatbread

    Preheat your oven to 425°F (220°C). Place the assembled flatbreads on a baking sheet and bake for 10-12 minutes until the edges are crispy.

    Finish with Truffle Oil

    Remove the flatbreads from the oven and drizzle with truffle oil before serving.
