Fried Chicken Breast

    Brine the Chicken

    In a large bowl, mix salt and water to create a brine. Submerge chicken breasts in the brine and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Chicken

    Remove chicken from brine, rinse, and pat dry. Soak in buttermilk for at least 1 hour.

    Bread the Chicken

    In a bowl, mix flour, paprika, garlic powder, onion powder, and black pepper. Dredge the soaked chicken in the flour mixture.

    Fry the Chicken

    Heat oil in a large skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 6-7 minutes per side.

Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and cut potatoes into quarters. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain potatoes and return to pot. Add minced garlic, butter, milk, salt, and pepper. Mash until smooth and creamy.

Country Gravy

    Make the Roux

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until golden.

    Add Milk

    Slowly whisk in milk, stirring constantly until the gravy thickens. Season with salt and pepper.

Collards

    Sauté the Garlic

    In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

    Cook the Collards

    Add collard greens, salt, and pepper. Sauté until greens are tender, about 10-15 minutes.
