Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Set Up Breading Station
In three separate shallow dishes, place the flour, beaten eggs, and panko breadcrumbs.

Bread the Catfish
Dredge each fillet in flour, then dip into the beaten eggs, and finally coat with panko breadcrumbs.

Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded catfish fillets and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the marbled rye bread slices. On four slices, spread a generous amount of 1000 Island dressing. Layer with fried catfish, a slice of Swiss cheese, and a handful of coleslaw. Top with remaining slices of bread.

Serve
Cut the sandwiches in half and serve immediately with extra coleslaw on the side.
