Crust Preparation

    Prepare the crust

    Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.

Filling Preparation

    Make the filling

    In a large mixing bowl, combine ricotta cheese, cream cheese, sugar, vanilla extract, eggs, and lemon zest. Beat until smooth and creamy. Pour the filling over the cooled crust.

    Bake the cheesecake

    Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for 1 hour. Remove from the oven and let it cool completely at room temperature before refrigerating.

Strawberry Compote Preparation

    Prepare the compote

    In a saucepan over medium heat, combine the sliced strawberries, sugar, and lemon juice. Cook for about 10 minutes, stirring occasionally, until the strawberries are soft and the mixture is syrupy. Remove from heat and let it cool.

Serving

    Once the cheesecake is fully chilled, remove it from the springform pan. Serve slices topped with the strawberry compote.
