Pasta Dough

Method

Making the Pasta Dough

  1. 1

    Prepare the Dough

In a large bowl, combine all-purpose flour and salt. Make a well in the center and add eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Preparing the Filling

  1. 2

    Mix the Filling

In a bowl, combine the braised veal, ricotta cheese, Parmesan cheese, chopped basil, salt, and pepper. Mix until well combined.

Forming the Raviolini

  1. 3

    Roll Out the Dough

Roll out the rested dough into thin sheets using a pasta machine or a rolling pin. Cut into squares about 2 inches in size.

  2. 4

    Fill the Raviolini

Place a small teaspoon of filling in the center of each square. Moisten the edges with water, fold the dough over to form a triangle, and press to seal. Repeat with remaining dough and filling.

Cooking the Sauce

  1. 5

    Prepare the Sauce

In a skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant. Add halved cherry tomatoes, salt, and pepper. Cook for about 10 minutes until tomatoes soften.

Cooking the Raviolini

  1. 6

    Cook the Raviolini

In a large pot of boiling salted water, cook the raviolini for 3-4 minutes until they float to the surface. Drain and add to the skillet with the sauce. Toss gently to combine.

Serving

  1. 7

    Serve

Transfer the raviolini to serving plates, garnish with fresh basil, and serve warm.
