Prepare the Cream Mixture
In a medium saucepan, combine the heavy cream and the vanilla bean (split and scraped). Heat the mixture over medium heat until it just comes to a simmer. Remove from heat and let it steep for about 15 minutes.

Whisk the Egg Yolks
In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is thick and pale.

Combine Mixtures
Slowly pour the warm cream mixture into the egg yolk mixture, whisking continuously to prevent curdling. Strain the mixture through a fine-mesh sieve into a clean bowl.

Bake the Custard
Preheat the oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes or until the custard is set but still slightly jiggly in the center.

Cool and Chill
Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 4 hours, or overnight.

Caramelize the Sugar
Once chilled, sprinkle a thin layer of sugar evenly over the top of each custard. Use a kitchen torch to caramelize the sugar until it's golden and crispy. Let sit for a minute to harden.
