Preparation of Vegetables

    Chop the Vegetables

    Wash and chop the zucchini, red bell pepper, yellow bell pepper, red onion, and mushrooms into bite-sized pieces.

    Season the Vegetables

    In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

    Grill the Vegetables

    Heat a grill pan over medium-high heat. Add the seasoned vegetables and grill for about 5-7 minutes, or until they are tender and have nice grill marks. Remove from heat and set aside.

Assembling the Panini

    Spread Pesto

    Take two slices of focaccia bread and spread a generous layer of pesto sauce on one side of each slice.

    Add Grilled Vegetables

    On top of the pesto side, layer the grilled vegetables evenly.

    Add Mozzarella Cheese

    Sprinkle the mozzarella cheese over the grilled vegetables, then top with the other slice of focaccia (pesto side down).

Grilling the Panini

    Grill the Panini

    Heat the grill pan again over medium heat. Place the assembled panini on the grill and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Serve

    Remove the panini from the grill, slice in half if desired, and serve warm.
