1. Prepare the Equipment

Sanitize all brewing equipment, including fermenters, bottles, and any utensils you'll be using. This is crucial to prevent contamination.

2. Boil the Water

In a large pot, bring 12 cups of water to a boil over high heat.

Brewing

3. Add Malted Barley

Once the water is boiling, add 6 cups of malted barley to the pot. Stir well and reduce the heat to a simmer.

4. Add Hops

After 30 minutes of simmering, add 2 cups of hops to the mixture. Continue to simmer for another 30 minutes.

5. Add Flavorings

Stir in 1 cup of brown sugar, 1 cup of honey, 2 tsp of vanilla extract, and 1 tsp of cinnamon into the pot. Simmer for an additional 10 minutes.

6. Cool the Mixture

Remove the pot from heat and let it cool down to room temperature.

7. Add Yeast

Once cooled, sprinkle the yeast packet over the mixture and stir gently to combine.

8. Ferment

Transfer the mixture to a sanitized fermenter and seal it with an airlock. Allow it to ferment for 1-2 weeks at a stable temperature.

Bottling

9. Bottle the Ale

After fermentation is complete, siphon the ale into sanitized bottles, leaving some space at the top.

10. Cap the Bottles

Seal the bottles with caps and let them carbonate at room temperature for another week.

11. Chill and Serve
