Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Drain on paper towels and set aside.

Prepare the Focaccia
While the bacon cooks, slice the focaccia bread into two equal halves.

Spread the Dijon Mustard
Spread the Dijon mustard evenly on one side of each slice of focaccia.

Layer the Ingredients
On one slice of bread, layer the roasted turkey, crispy bacon, tomato slice, red onion slices, and cheese if using.
Cooking

Grill the Panini
Heat a panini press or a skillet over medium heat. If using a skillet, brush the outside of the sandwich with olive oil.

Press and Grill
Place the sandwich in the panini press or skillet. If using a skillet, place a heavy pan on top to press down the sandwich. Grill for about 3-5 minutes until the bread is golden brown and the cheese is melted.

Serve
Remove the panini from the heat, slice in half, and serve warm.
